Zero waste, zero food miles

Local, organic produce from the province: pulses and grains from La Moraña, fruit and olive oil from the Tiétar Valley, meat and wild mushrooms from Gredos. Ferments, so that nothing goes to waste. And a wine list that states the carbon footprint of imported bottles and works to offset it through reforestation.
