You leave the walled city, cross the Adaja and, beside Los Cuatro Postes, the house appears. From here the walls are no longer walked upon: they are contemplated.

THE SETTING

The other bank

This building was once a wheat store and a flour mill. Today its three floors hold something else: a table, an open kitchen and a cellar. The restoration revealed what was already its own: the timber trusses, the brick, the walls in tones of clay.

THE TERRITORY

Brick, oak, clay

Bare oak tables on a floor of polished earth. Handmade ceramics on the sideboards. Esparto, wicker, linen. Nothing disguises the building; everything continues it. The kitchen works in full view, and the light — of the room and of the day — does the rest.

THE RECOGNITION

Ávila's first star

At 24, Carlos Casillas earned the first Michelin star in the city's history. Then came the Green Star for sustainability, the Guía Repsol Sun and the Michelin Young Chef Award.

One house, three storeys

Barro, the gastronomic table: a cuisine of searching, with a Michelin Star and a Green Star. Surco, the traditional eating house, recommended by the Michelin Guide. Fango, the cocktail bar, beside the cellar.
