Our story

From a wine bar to Ávila's first star

BARRO was born small, with one conviction: that small provinces have much to say. In five years, a wine bar on Calle San Segundo became the first Michelin Star in the history of Ávila.

  1. 2021

    Carlos Casillas opens Mûd Wine Bar on Calle San Segundo, with more than two hundred references: "Our sole intention was that people should drink the wine of Ávila."

  2. 2023

    On 1 April, BARRO opens: a tiny three-table room facing the city walls, with a single menu.

  3. 2023

    In November, the Michelin Guide awards it the first Star in the history of Ávila, together with the Green Star. Carlos, at 24, is the youngest chef in Spain at the helm of a starred kitchen.

  4. 2024

    The Repsol Guide Sol arrives. In August, BARRO crosses the river: it moves into a former flour mill, two centuries old, beside Los Cuatro Postes, with three floors for three ideas.

  5. 2024

    The Michelin Young Chef Award. Days later, BARRO lowers the price of its menu: "We want to share it."

  6. 2025

    Surco, the eating house, opens, recommended by the Michelin Guide. Fango, the cocktail bar, is already serving beside the cellar.

  7. 2026

    BARRO retains its Star, its Green Star and its Sol. In July, with World Central Kitchen, it cooks thousands of meals for those affected by the Ávila fire.

One house, three storeys
